Turkey Egg Roll in a Bowl






If you want an easy meal prep recipe for the week, THIS IS IT! 🔥


INGREDIENTS:

-1 lb lean ground turkey or pork

-1 Tbsp minced garlic

-2 tsp ginger

-1 cup diced white onion

-2 tbsp soy sauce

-Sriracha or hot sauce for topping

-1 (14 ounce) bag coleslaw mix

-1 tsp rice vinegar

1 tsp sesame or vegetable oil


INSTRUCTIONS:

1. Add the oil and ground turkey to a large frying pan over medium heat. Brown the pork, breaking it apart as it cooks.

2. Push the turkey to the sides of the pan and add the garlic and ginger to the center, cook 1 - 2 minutes then mix it into the turkey.

3. Add the onions and cook 1 - 2 minutes, mixing them with the turkey.

4. Add the coleslaw and 1 - 2 tablespoons of water. Cook about 10 minutes, stirring often until the vegetables are soft and wilted.

4. In a small bowl mix the soy sauce and vinegar with 1 tablespoon water. 5. Stir it into the pan, mixing well, cook 2 - 3 more minutes, stirring often.

6. Serve with additional soy sauce and sriracha or hot sauce.
