Southwest chicken cauliflower rice bowl!

This is fresh, EASY, and incredibly satiating! Meal prepping does not have to be complicated nor expensive.
INGREDIENTS:
-1/2 bag of microwaveable cauliflower rice
-1/2 avocado
-2.5 cups Italian romaine lettuce
-1/2 tomato, diced
-1/4 cup canned corn
-1/4 cup black beans
-1/4 cup lime juice
-2 Tbsp fresh cilantro
Optional: 1/4 cup dice red onions and 1-2 Tbsp primal kitchen cilantro lime dressing
INSTRUCTIONS: Either layer a bowl starting with the lettuce, then the rice OR add to container and shake it up. Literally that easy.
MACROS: 339 calories (33g protein, 33g carbs, 12g fat)
