Roasted “Crack” Broccoli


Eating bats is cool but have you ever tried eating oven roasted broccoli with ranch seasoning?


I can’t imagine eating veggies without any seasoning or sauce-like wut?


Veggies can taste so good with the right seasoning, making them an enjoyable side to meal prep for the week.


This is one of my FAVORITE ways to prepare broccoli:


➡️ Ingredients:


•2.5 lb. broccoli crowns


•1/3 cup olive oil or grape seed oil


•1/2 zest of lemon


•2 tsp lemon juice (about 1/2 lemon)


•1.5 tsp salt


•1/2 tsp ground black pepper


•1/8 tsp red pepper flakes


•1.5 tsp ranch seasoning dry powder


•1 tsp garlic paste (or 1/2 Tbsp garlic powder)


•1/3 cup grated parmesan cheese (can be fat-free)


optional: 1/4 cup raw sliced almonds


Instructions:


1. Preheat oven to 475 degrees F.


2. Wash and cut broccoli florets from thick stalk


3. Slice or pick apart florets into individual pieces.


4. In a large mixing bowl, whisk together olive oil, zest of 1/2 lemon, 2 tsp lemon juice, salt, pepper, red pepper flakes, ranch dry seasoning powder, and garlic.


5. Toss broccoli florets into bowl and coat well.


6. Spread onto a large rimmed sheet pan.


7. Bake in oven 10-12 minutes.


8. Remove pan from oven and flip broccoli over. (Optional) Sprinkle almonds onto the baking sheet.


9. Bake for another 5-10 minutes or until desired tenderness is reached. TIP: If added, almonds will toast quickly. Only add them the last 5 minutes of baking.


10. Remove from oven and sprinkle with grated parmesan cheese.
