Pumpkin Spiced Protein Cupcakes



This is literally such an easy recipe to make and allows you get some protein in compared to most cupcakes!


INGREDIENTS:

-3/5 box (15 - 18 ounces) spice cake mix

-1 can pumpkin puree

-2 scoops whey protein (I used Cinnamon Cookie Batter)

-1-2 splashes of milk (I used cashew milk)

-frosting of choice (I used cream cheese frosting)

-muffin liners


INSTRUCTIONS:

1. Position an oven rack in the center of the oven.

2. Preheat the oven to 350F degrees and line 12 muffin cups with paper liners or coat them with non-stick spray.

3. Make the batter in a large bowl by mixing just the ingredients together, ignoring the instructions on the cake mix, until the mixture is very thick.

4. Divide the batter evenly among the muffin cup tins.

5. Bake at 350F degrees until a toothpick inserted in the center comes out clean, 10-12 minutes.

6. Remove and place on wire racks to cool.


MACROS FOR ONE: ~153 calories (3.8g fat, 5g protein, 25.2g carbs)
