Pumpkin Spice Protein Rice Crispy Treats

It may still be 90 degrees in Texas, but IT’S GOING TO BE FALL IN MY KITCHEN!


I wanted to kick off my first fall recipe with an easy family favorite, just making it healthier with additional protein!


INGREDIENTS:

-1/4 pumpkin purée

-3 scoops Level-1 protein (I used Ice Cream Sandwich, but the new Pumpkin Spice Latte flavor would be heavenly)

-2 Tbsp butter (I used light butter)

-4 cups mini marshmallows

-6 cups rice crispy cereal

-1/2 tsp pumpkin pie spice

-1/2 tsp cinnamon


INSTRUCTIONS:

1. In a medium bowl, mix the pumpkin and level-1 protein together till thoroughly blended with a sticky texture. Add teaspoons of water as you go if too dry.

2. In a large pan, melt your butter on medium low heat and add 4 cups mini marshmallows.

3. Add your pumpkin puree to your melted marshmallows along with your cinnamon and pumpkin pie spice.

4. Toss in your rice krispie cereal and stir.

5. Pour your treat mix into a 9×13 greased baking pan. Cover your treat mix with parchment paper and press your treat mix into the pan.

6. Allow your treats to cool, cut into 12 bars, each one being a serving, and enjoy!


MACROS PER SERVING: ~155 calories (2g fat, 6.9g protein, 26.4g carbs)
