I have a huge sweet tooth and love to eat a lot at night, so this quick recipe has been a life saver!
INGREDIENTS:
-1 scoop protein powder (I used Cinnamon Cookie Batter Level-1)
-1 tbsp (10g) sugar-free jello pudding mix (I used butterscotch)
-20 ice cubes
-1/2 tsp xanthum gum
-1/2 tsp butter extract
-2 tsp alternative sweetener (I used Swerve)
-1/2 cup unsweetened almond or cashew milk
Optional: toppings such as crushed oreos, mini marshmallows, etc.
INSTRUCTIONS:
1. Add ice cubes to food processor or blender and pulse on the highest power for about 3 seconds 10 to 15 times till all the ice is crushed and snow-like.
2. Add in the protein powder, pudding mix, almond milk, sweetener, and butter extract.
3. Blend on the lowest speed for 5-8 minutes.
4. Stop the processor or blender. Using a small spatula or spoon, scrape the remaining ice and ingredients from the sides into the rest of the fluff.
5. Add in the xanthum gum. Pulse again for 2-3 seconds for about 10 times or until mixture is smooth and everything is mixed in.
6. Add toppings of choice and enjoy!
MACROS WITHOUT TOPPINGS: ~159 calories (25g protein, 5g carbs, 4g fat)
