Kodiak Cake Protein Cookies




It’s taken me literally a year or so to master a quality protein cookie that has great texture but is also filling and aids in protein consumption! This is one. 👑

INGREDIENTS:

-3/4 cup brown sugar

-1/4 alternative sweetener (I used swerve but monk fruit would work too)

-3/4 cup light butter (I used Olivio light vegetable oil butter)

-1/2 cup level-1

-1 cup kodiak cake mix (buttermilk)

-3/4 cup chocolate chips

-1 tsp vanilla extract

-1 egg

-1 cup oats


INSTRUCTIONS:

1. Preheat your oven to 350°F. Line a baking sheet(s) with parchment paper, then set aside.

2. In a large mixing bowl, add the butter, brown sugar, and alternative sweetener, then cream together. Add the large egg and pure vanilla extract and combine. Add the Kodiak Cake mix and oatmeal. Add the semi-sweet chocolate chips, mix evenly.

3. Using a small cookie scoop, scoop the dough into balls and space out on the prepared rimmed baking sheet. Bake for 9-11 minutes.

4. Let cool and enjoy!


MACROS PER COOKIE: ~196 calories (6g protein, 8g fat, 25g carbs)
