Double chocolate chunk protein brownies


These are literally the best batch of brownies I have ever made and tasted like cosmo brownies, minus the sprinkles on top, plus more protein than a regular brownie!


Ingredients:

-1 cup butter, melted and cooled (I used Country Crock light butter)

-1 cup alternative sweetener (I used Swerve)

-1/2 cup packed dark brown sugar

-1/2 cup granulated sugar

-4 large eggs

-1 tablespoon pure vanilla extract

-3/4 cup all-purpose flour

-1/4 cup protein powder (I used Level-1)

-1 cup unsweetened cocoa powder

-1 teaspoon salt

-1 ¼ cups dark chocolate chips


Instructions:

1. Preheat oven to 350°F, then spray a 9×13" baking pan with nonstick cooking spray.

2. Line with parchment paper or aluminum foil with an overhang on the sides and spray again.

3. In a large mixing bowl, stir together melted butter, sugar (both alternative and regular), eggs, and vanilla extract until smooth and combined.

4. Sift in flour, protein and cocoa. Add the salt and stir until just combined. Don't over mix.

5. Fold in 1 cup of chocolate chips.

6. Spread evenly into prepared pan and sprinkle the remaining 1/4 cup of chocolate chips on top of the brownies.

7. Bake for 25-30 minutes on the middle rack in the oven until the brownies are just set to touch.

8. Cool off once done then freeze for later!
