Copycat Starbucks Feta Spinach Wraps

These are by far my favorite thing to get at Starbucks due to the flavor and protein...they are also SUPER easy to make, making it a perfect breakfast for on the go! 😍


INGREDIENTS:

-6 whole grain tortillas (10 inch minimum is best)

-10-12 cups fresh spinach

-dash of garlic salt

-1/3 jar roasted red peppers

-3/4 cup whipped cream cheese

-2 cups liquid egg whites

-3/4 cup crumbled fat-free feta

-6 tbsp sun dried tomatoes

-cooking spray (I used avocado oil)

-saran wrap


INSTRUCTIONS:

1. Put tortillas out in the fridge for 15 minutes before you start, then pull them out.

2. Sauté the 10-12 cups of fresh spinach sprinkled with garlic salt in a greased medium in a nonstick pan until wilted.

3. In a small skillet sprayed with cooking spray, cook 1/3 cup egg whites at a time making thin omelets. You’ll repeat the process six times.

4. Spread two tablespoons of cream cheese across each tortilla.

5. Assemble your burritos, add to the center of each tortilla: 1/6 of spinach mixture, one tablespoon chopped roasted red peppers, one mini egg white omelet, two tablespoons feta cheese, and one tbsp sundried tomato.

6. Fold the burritos at the ends, then roll them and wrap them in parchment paper.

7. Store in the refrigerator for up to 3 days. You can microwave them for 30 seconds or heat on a sprayed pan over medium-high heat, 1-2 minutes per side, for a crispier version.
