This was another recipe that did not disappoint! These are calorie-friendly and higher in protein than a regular donut hole, making for a great snack that feels like a cheat meal!
Ingredients:
•1 scoop @1stphorm Blueberry Muffin Level-1 protein
•1/2 cup nonfat vanilla Greek yogurt
•1/4 cup coconut flour
•1 Tbsp Swerve powdered sugar
•2 1/2 Tbsp sugar-fee vanilla yogurt
•1 egg
• (optional) 1/4 cup blueberries
For rolling the donuts in after baking:
•2 Tbsp Swerve powdered sugar
Directions:
1.) Preheat an oven to 350F and line a baking sheet with parchment paper.
2.) Mix all the dry ingredients in a large bowl, then add the Greek yogurt and egg to the dry ingredients and stir until you have a giant ball of dough. (I keep my hands wet with water to prevent the dough from sticking to my hands).
3.) Once you have the ball of dough, pinch off 8 smaller balls and place them on the baking sheet.
4.) Using your hands (keeping them wet), roll the balls between your hands until smooth.
5.) Bake for 14-16 minutes or until the donut holes are cooked through, then allow the donut holes to cool for about 5 minutes before rolling them in the additional powdered sugar.
